For the base

  • 250 g wholemeal butter biscuits

  • 85 g melted butter

For the filling

  • 900 g cream cheese

  • 300 g sugar

  • 30 g starch

  • 1 teaspoon vanilla extract

  • 2 eggs

  • 175 ml cream

For the topping (optional)

  • Chocolate icing

  • Sugar sprinkles

  • Fresh fruit

  • Dried berries

Step 1: Preparation for the Mother's Day cake

  1. Preheat your oven to 175 °C top/bottom heat.

  2. Grease the base and sides of the springform pan with butter or line with baking paper.

  2. Spread the biscuit mixture evenly in the springform pan and press the base down well.

  1. Beat 300 g of the cream cheese with 100 g sugar, the vanilla extract (alternatively: vanilla sugar) and the starch until fluffy.

  3. Add the remaining eggs one at a time and beat until creamy.

  4. Finally, stir in the cream.

Step 4: Off to the oven - baking the Mother's Day cake

  1. Wrap the bottom of your springform pan with aluminium foil and place it on a slightly larger baking dish (or a greased pan).

  2. Fill the baking tin a few centimetres with warm water.

  3. Bake the cheesecake in a 175 °C oven for about 80 to 85 minutes.

Tip: If you don't want to use aluminium foil for the water, you will need a leak-proof baking tin so that no water can run into the springform pan. Alternatively, you can simply place the baking dish filled with water one level below your cheesecake in the oven, as the steam will still reach your cake.
