Step 1: Preparation for the Mother's Day cake

  1. Preheat your oven to 175 °C top/bottom heat.

  2. Grease the base and sides of the springform pan with butter or line with baking paper.

  3. Have a deep tray or pan ready for the water bath.

Tip: Your ingredients should be at room temperature.

Did you know that...

In addition to a creamy cheese filling, a true American cheesecake needs a crunchy base, which is traditionally made of crackers. You can use butter biscuits as a substitute for this - wholemeal butter biscuits are best, as they have a stronger flavour.

Step 2: The simple crunchy base

  1. Crumble the butter biscuits, e.g. with a rolling pin. Mix the biscuit crumbs with the melted butter.

  2. Spread the biscuit mixture evenly in the springform pan and press the base down well.

Step 3: Make the creamy-sweet filling

  1. Beat 300 g of the cream cheese with 100 g sugar, the vanilla extract (alternatively: vanilla sugar) and the starch until fluffy.

  2. Gradually add the rest of the cream cheese and sugar and beat until creamy.

  3. Add the remaining eggs one at a time and beat until creamy.

  4. Finally, stir in the cream.

Bear in mind that...

Unlike the German quark or cheesecake, the American cheesecake is baked in a water bath. This variation in preparation ensures that the cheesecake is particularly creamy and smooth.

Step 4: Off to the oven - baking the Mother's Day cake

  1. Wrap the bottom of your springform pan with aluminium foil and place it on a slightly larger baking dish (or a greased pan).

  2. Fill the baking tin a few centimetres with warm water.

  3. Bake the cheesecake in a 175 °C oven for about 80 to 85 minutes.

Tip: If you don't want to use aluminium foil for the water, you will need a leak-proof baking tin so that no water can run into the springform pan. Alternatively, you can simply place the baking dish filled with water one level below your cheesecake in the oven, as the steam will still reach your cake.

Step 5: Decorate the Mother's Day cake

You can decorate or modify the Mother's Day cake as you like, as the basic cheesecake recipe is very versatile. With a white or dark chocolate icing, a caramel or strawberry sauce, fruit puree made from frozen raspberries or simply with fresh fruit, the Mother's Day cake is guaranteed to be a treat.

Bear in mind that...

If you bake the cheesecake in a smaller springform pan (e.g. Ø 20 or 24 cm), the filling will be a little higher, but it will also have to be baked a little longer. To see if your Mother's Day cake is baked through, you can gently shake the tin. If the filling is barely wobbly, the cheesecake is ready.
